Ben's Famous Pan Of The Cake
- Semi-Instant Pancake Mix
Ingredients
- 6 cups (794 grams) all-purpose flour - 2 tablespoons (28 grams) sugar - 1 tablespoon kosher salt - 1 tablespoon baking powder (be precise: check the expiration date) - 1 1/2 teaspoons baking soda (be precise: check the expiration date)
Direction(s)
Sift all ingredients together and store in an airtight container in the pantry for up to 3 months. Shake vigorously before each use.
- Semi-Instant Pancakes
Ingredients
- 283 grams (2 Cups leveled) semi-instant pancake mix from above - 2 large eggs, separated, at room temperature - 2 cups low-fat buttermilk, at room temperature - 4 tablespoons (57 grams) unsalted butter, melted and cooled - 1 cup (227 grams) fresh fruit, such as blueberries, optional
Directions
1) Heat an electric griddle to 350ºF or set a heavy skillet or griddle over medium heat. 2) Heat oven to the lowest possible temperate, not more than 200ºF. 3) Place the pancake mix in a large mixing bowl. 4) In a second bowl, whisk together the egg whites and buttermilk. 5) Whisk the egg yolks into the cooled melted butter. Whisk the butter mixture into the buttermilk mixture until completely incorporated. 6) Pour the wet ingredients into the dry ingredients and quickly bring together with a large whisk. I allow myself only 12 stirs, then I walk away. Yes, there will be some lumps in the batter, and that’s fine. 7) Check the griddle. When a drop of water skitters across the surface like a little hovercraft, it’s ready. Lightly grease the griddle with butter, shortening, or nonstick spray, and wipe off the excess with a paper towel. 8) Ladle 1 ounce (by volume) of batter onto the griddle. Cook until bubbles around the upside edge set, about 3 minutes. If you wish to integrate the fruit into the pancake itself, add it after the batter has been on the griddle for about 30 seconds. 9) Carefully flip with a wide spatula and cook until golden brown on the bottom, another 2 to 3 minutes. 10) Serve immediately or place on a half-sheet pan, cover with a kitchen towel, and keep warm in the oven for up to 20 minutes. Like they gonna last that long.
Coconut Shrimp
- Ingredients
*1 1⁄2 lbs shrimp, peeled & de-veined *1⁄2 oil *1 egg *1 cup flower *1⁄2 cup milk *3⁄4 teaspoon seasoning salt *1⁄4 teaspoon salt *Coconut oil for frying
- Directions
1) Preheat oil to 350 degrees. 2) Combine 1/2 cup oil and egg; beat well. 3) Add remaining ingredients except oil for frying and stir until well blended. 4) Dip shrimp into batter to coat. 5) Drop shrimp into hot oil and fry for 30-60 seconds or until golden brown. 6) Remove with slotted spoon; drain on paper towel.
Add a 1/2 teaspoon of baking powder to batter to make a much lighter crust, or use beer instead of milk for a barley flavor.
Deep Fried Chicken Tenders
- Marinade Ingredients
*2lbs chicken tenderloins *1 cup buttermilk (or 1 cup milk & 1 tablespoon vinegar) *1.5 teaspoons salt *1.25 teaspoons cayenne pepper *1.25 teaspoons garlic powder *0.25 teaspoon of paprika
- Breading Ingredients
*1.5 cups flower *0.5 cup of crushed corn flakes *1 teaspoon salt (heaping) *0.75 teaspoon pepper *0.75 teaspoon garlic powder *0.75 teaspoon paprika *Sprinkle of cayenne pepper to add some spice *1.5 teaspoons baking powder *3 tablespoons buttermilk (use marinade for extra flavor!)
- Directions
*Heat oil to ~350°F *Cook breaded tenders for 4-6 minutes
Heidi’s Fish Taco Sauce
- Sauce
- Red bell peppers jar (1) drained
- Jalapeño (2) 1 if your sensitive
- Cilantro / hand full
- Garlic (3 cloves)
- Mayo 3 cups (1.5 cups suggested)
Mix in blender
- Fixings
- Cabbage
- Black beans
- Tomatoes
- Red onion
- White corn tortillas
- Limes! (A must)
Mac And Cheese
- Ingredients
- 12oz dry pasta - Cold water - 12oz evaporated milk - 12oz shredded cheese(s) of choice - Seasoning (salt, black pepper, cayenne pepper, and chili powder)
- Directions
1) In a pan, cover pasta with enough cold water to submerge. Bring to a boil. Allow to simmer until most of the water is gone, and pasta is cooked. Drop heat from medium-high (7-10) to medium (5-6). 2) Add evaporated milk. Bring to a simmer. Drop heat to low (1-3). 3) Add shredded cheese and seasoning. 4) Mix over low heat until creamy.

Sesame Chicken
- Chicken Marinade Ingredients
- 1lb of chicken - 2 cloves of garlic - Black pepper to taste - 1.5 teaspoons soy sauce - 1/2 teaspoon salt - 3/8 teaspoon baking soda - 1 egg - 1/2 tablespoon (corn) starch for marinade - 1 cup of (corn) start for coating chicken - 2 cups oil
- Sauce Ingredients
- 2 tablespoons honey - 3 tablespoons brown sugar - 2.5 tablespoons soy sauce - 3 tablespoons water - 2.5 tablespoons ketchup - 1 tablespoon vinegar - Sauce thickener (2 teaspoons starch w/ 2 teaspoons water), double for thicker sauce - 1 tablespoon sesame oil - 1.5 tablespoons (toasted) sesame seeds
- Frying Directions
1) Cut chicken into cubes 2) Combine garlic, soy sauce, salt, pepper, baking soda, egg, and starch to make marinade 3) Marinate for 40 minutes 4) In a separate container, coat marinated chicken in starch 5) Heat oil to 380°, add chicken, fry until slightly yellow (~2 min) 6) Remove chicken, repeat step 5 as necessary 7) Double fry chicken for another few minutes 8) Remove oil from wok and gently wipe inside w/ paper towel
- Sauce Directions
Consider doubling the sauce recipe!
1) Mix & combine brown sugar, honey, soy sauce, ketchup, water, vinegar 2) Add sauce to wok 3) Mix well to prevent sugar from sinking to the bottom 4) Bring to a boil, add sauce thickener 5) Stir until texture is syrup-y 6) Add fried chicken back to wok, stir until chicken is coated 7) Drizzle w/ sesame oil and seeds
